Oven Grilled Salmon with Sesame-Miso Mayo

Baked fish has a distinctive smell, which many young children may find unpleasant. A common way to eat baked fish in Japan is to simply pour soy sauce over it after baking, but in this recipe, in an effort to dispel the aversion many have for eating it this way, we use miso instead!

By mixing the miso with mayonnaise, the flavor becomes much smoother and softer, making it easier for children to enjoy. Another useful trick is adding ground sesame seeds! This gives it a distinctive aroma, and instant depth to the taste. Salmon contains highly nutritious elements, such as astaxanthin, vitamin C and vitamin E antioxidants, which helps to strengthen the immune system. It also includes DHA and EPA, which are said to have positive effects on brain cells and improving memory.

Use This Simple Seasoning and Cooking Method to Enjoy a Variety of Fish
The miso in this recipe can be enjoyed not only with salmon, but with a wide variety of fish, such as cod, mackerel, swordfish tuna and yellowtail.

All you do is lay the fish on aluminum foil and bake it in the oven. You will love how easy it is to cook and the fact that there are no dishes to wash.

  • pieces Raw salmon (2¾ oz / 80g each)
  • a pinch Salt
    • A
    • tbsp Ground sesame seeds
    • tbsp Mayonnaise
    • tsp Miso
    • tsp Sugar


Step 1

Sprinkle salt on the raw salmon and let sit at room temperature for 10 minutes. Wipe away any excess moisture after letting it sit.

Step 2

Preheat the oven to 464°F (240°C).

Step 3

Line aluminum foil on an oven plate and grill salmons in a preheated oven at 464°F (240°C) for 5 minutes.

Step 4

Mix the ingredients in (A) well. Spread it on the salmon and grill it in the oven for about 5 minutes until it turns brown.

If possible, let the salmon sit for at least 10 minutes after sprinkling salt on it, and then wipe away any excess moisture. This will remove the bitterness and make it even more delicious.
